This week I was reading a press release from Mayo Clinic and it said that researchers are tracking a link between gluten in the diet and an increased risk of diabetes Type 1. This study was done with lab mice – not people - but still it’s an interesting development. It said that a gluten diet causes changes to an intestinal microbe and those microbial changes impact the likelihood of developing diabetes type 1 – which in case you don’t know is serious illness requiring glucose monitoring and insulin injections.
